Oaxacan Chorizo is made in the style of the State of Oaxaca in Mexico.
Real Mexican food is amazing - well seasoned and spicy, much as Indian food and Cajun food are, though the flavor profile is it's own.
Our Oaxacan Chorizo is full of dried chilies: Guajillo, Ancho, Arbol, and Chipotle Morita to be exact. To compliment the chilies Pineapple vinegar was also used as well as cinnamon, cloves, allspice, black pepper, cumin seed and more.
This sausage has a creeping kind of heat, not terribly hot, but it is spicy.
Chorizo makes great tacos, or eat it for breakfast with eggs. We like it added to homemade Macaroni and Cheese. One customer tells us that she adds it to potato soup and another adds it to their chili recipe.
