These Lao Sausage links came about because a customer suggested them. It took a bit of searching to find a recipe that I wanted to try making.
Lao Sausage is a bit spicy thanks to cayenne pepper and hot pepper flakes - it's the hottest sausage that I've made so far (I'm a bit afraid of really hot food!).
The flavor is unique and unlike any American sausage in that it is seasoned with lemon grass, kaffir lime leaves, galangal and oyster sauce.
