Cotechino Sausage is another classic northern Italian Sausage. In Italy, it's more of a seasonal sausage. In fact, our daughter Carmin says that it smells like Christmas. But I can't think of a good reason to restrict it's consumption to the holidays.
Seasoned with cinnamon, cloves, allspice and nutmeg, it definitely does smell of holiday baking, but it contains no sugar and the Parmesan cheese helps bring the taste back around to savory and not sweet.
