Merguez is a Mediterranean sausage that is traditionally made from lamb and made into smaller links. However, I decided to mix things up a bit and make a Chicken Merguez! It came out very well and wins our daughter, Carmin's full approval (never an easy task!).
I find that loose sausage is not only less expensive, but sometimes it's just easier to cook.
This one is a little bit spicy.
