- 3-2 inch peace of kombu( a type of dry seaweed)
- 3/4 cup of water
- 1/2 cup of bonito flakes
- 3/4 cup of soy sauce
- 1/4 cup + 2 tbsp of mirin
First, put the kombu, bonito flakes, and water in a saucepan and bring to a boil.
Turn off the heat after it comes to a boil and let it steep for 10 min
Strain that broth and dispose of the kombu and bonito. add the soy sauce and Mirin, stir it up and you're done.
Add this to your Ramen broth to taste.
