Not Your Mama's Meatloaf
Paleo meatloaf with no tomatoes, anywhere. Not inside and not on top. It's not that we don't like tomatoes, but meatloaf really doesn't need added ketchup or tomato sauce to make it great. It's so easy - make it a few days ahead so that all you need to do is put it in the oven. Maybe bake some potatoes or sweet potatoes at the same time so dinner is all ready to go.

Ingredients

  • (1 lb) Ground beef
  • (1 lb) Ground pork
  • (1 TBSP) Dried onion flakes
  • (1 1/2 tsp) Garlic Salt
  • (2 tsp) Dried Rosemary
  • (1 1/2 tsp) Dried Thyme
  • (to taste) Black Pepper
  • (1/4 cup) Almond flour
  • (1) egg
  • (1) egg

Directions

Combine the meats and the egg first.

Then add all of the dry ingredients.  Work them in with a large spoon or fork - I like to use my hands to make sure it all gets mixed in well.

Fill a loaf pan and level off the top.

Bake at 350 degrees for 1 hour and 15 minutes. 

Slice and serve.

This recipe is super easy to make ahead of time - just throw it in the oven at the same time as some baking potatoes, or keep it paleo and use sweet potatoes.

I forgot to get a pic before I served this....  I only got half a slice.  Three teenagers gobbled it down fast!
