Heritage breed free range Canadian Bacon! Also known as Smoked Pork Loin. This is sliced about 1/4 inch thick, just like our bacon. It’s less salty than bacon and has less fat on it. It cooks up great on the griddle or in a skillet. I think it would be excellent chipped in some gravy too!
It’s cut across the grain, making it super tender. The small amount of fat around the edges melts in the mouth like butter.
This meat is smoked, but still requires heating to 160 degrees before eating.
